Egg Salad Stuffed Bell Pepper

I don’t know about you, but I still have two dozen hard boiled eggs in an assortment of lovely Easter colors that are about to go bad in my refrigerator. This is the time of year when we gorge on and then get sick of egg salad and this bell pepper presentation of it is a great way to finish up that crazy, boiled egg rampage. If you can land some bell peppers (that are likely from Mexico right now, but man, all this egg salad calls for drastic measures), this recipe is a pretty good bet. I do like the addition of the crab to add more good-quality protein and great flavor.

Serves: 4

Ingredients: Crab Stuffed Bell Peppers

  • 4 peppers

  • 4 cups prepared egg salad
  • Canned crab meat
  • One tablespoon dry dill weed
  • 16 pearl tomatoes
  • 4 whole black olives
  • 4 large romaine leaves

Steps: Crab Stuffed Bell Peppers

  1. Clean out the peppers by cutting out the stem and pulling out the seedy white fiber from the middle of the pepper.

  2. Using a sharp paring knife, cut down into the lobes of each pepper. The idea is to cut down far enough to have the lobes open up enough to hold more salad…and look very interesting at the same time.
  3. Place a large leaf of romaine on each salad plate and top with a pepper.
  4. Mix the crab and dill weed into the egg salad. Egg salad by itself would be fine, but the addition of crab makes this dish much more hearty and special.
  5. Fill each pepper.
  6. Finish off the salad plates with a garnish of pearl tomatoes and black olives. Sprinkle a bit more dill weed on top of the peppers. And there you have it: easy and company-worthy!

    For variations on these stuffed bell peppers, stuff the pepper with tuna salad or salmon salad. Put cucumber sticks, tomato slices and lemon wedges on the side for garnish. Sprinkle minced chives over the top.
